These tasty little snacks or appetizers are very easy peasy to make and and only need three ingredients. They are low carb and gluten-free as well. They can also be made ahead of time and refrigerated until ready to serve.
Slice dill pickle spears in half.
I prefer to use Applegate ham because it doesn't contain any nitrates but you can use any type of ham you prefer.
Spread softened cream cheese evenly over to the ham
Place a dill pickle spear on edge and roll up. Secure with toothpicks. Slice into bite-size smaller pieces.

Light cream cheese
Lay the ham slices flat on a serving plate and pat dry. Spread with cream cheese. Place a pickle spear at one end of each slice, and roll the slices into cylinders around the spears; secure with toothpicks.
